Hermitage 2010 Grande Champagne Cognac, 43.0%
From maturing in cask, this cognac continues to develop its unique character over time. It carries the classic hallmarks of Grande Champagne terroir, with traditional notes of mocha and toffee, elevated by hints of butterscotch and sweet spices.
Distilled on a 25hl still with an inverted tulip-shaped head, the process incorporates fairly heavy lees, ensuring a spirit rich with wine-like flavours. Aged in 350-litre Limousin casks, first in new wood and then older barrels, the cognac benefits from a balance of oak influence and slow maturation in medium damp cellars.
Made predominantly from Ugni Blanc, with some Folle Blanche in the mix, it showcases the finest aspects of the region's viticulture and its famed chalky soil, which enhances the finesse of the final product.
Tasting Note: On the nose, delicate aromas of butterscotch, lychee, and toffee invite you in. The palate opens with a rich mocha sensation, followed by layers of toffee and warming spices like mace. As it develops, the cognac reveals elegant fruit notes of apricot and mandarin, leading to a long, complex finish. This youthful cognac holds the promise of greatness, and every sip hints at its continued evolution in the cask.
